USE OF ELECTRIC CONDUCTIVITY MEASUREMENTS FOR THE DETECTION OF ADDITION OF WATER, SODIUM CHLORIDE AND CAUSTIC SODA IN MILK
Abstract
This paper presents the study and evaluation of a procedure for detecting fraud such as dilution with water, sodium chloride and caustic soda in milk. The method is based on electrical conductivity measurements. The results show a linear decrease in conductivity as water is added. Moreover, the addition of caustic soda and sodium chloride result in increased electrical conductivity. It was found that is possible to use electrical conductivity measurements to check frauds in milk with water, sodium chloride and sodium hydroxide, since these were not added simultaneously.
