SWEETENED CONDENSED MILK PRODUCTION BY APPLYING OSMOSIS REVERSE: A TOOL FOR THE TECHNOLOGY

Abstract


The objective of this work was to show a review focused on sweetened condensed milk technology and on reverse osmosis milk concentration. Different aspects of these technologies have been showed: sweetened condensed milk market, milk proteins, milk concentration, sweetened condensed milk regulations, sugar addition, membrane filtration and reverse osmosis. The use of both technologies can reduce evaporation costs in sweetened condensed milk production.
