MASS BALANCE APPLIED TO THE SWEETENED CONDENSED MILK TECHNOLOGY: THEORETICAL CONSIDERATIONS

Abstract


The aim of this work was to apply the mass balance in the sweetened condensed milk technology. Theoretical calculations were performed in milk fat standardization, in fat and non-fat solids relation (RF) and in yield determination. The equations and examples showed in this work can be useful in the standardization of sweetened condensed milk technology by the industry.
